Aloo bajji or potato fritters are a healthy fast food because there are no refined carbohydrates used and it is homemade.
Ingredients
2 potatoes
1 cup besan/gram flour/chickpea flour/senaga pindi
2-3 tsp rice flour
1/2 tsp red chili powder
1 pinch turmeric powder (optional)
1 tsp carom seeds/ajwain/vamu
a pinch of baking soda
oil for deep fry
Preparation
Wash the potatoes thoroughly by scrubbing them.
Cut them into thin slices. Do not peel.
After cutting wash one more time and put in water.
Take some oil for deep fry in a skillet and put the skillet on medium flame.
Procedure
Take all the dry ingredients in a vessel except baking soda.
Take ajwain seeds into your hand and press between your palms and add them into the dry ingredients to bring the flavor out.
Then add water slowly to make batter. Do not add too much water at once. Batter can not be too thick or too loose. It is like a pancake batter consistency.
Then add baking soda and mix the batter well without any lumps.
Now you are ready to fry bajjis.
Check if the oil is hot enough by putting a little bit of batter in oil. If the batter comes up quickly the oil is ready. If not wait until the oil is ready. Do not put the bajjis in oil when the oil is not ready.
Take a potato slice and dip in the batter. Let the excess batter drip and hold the slice upwards and then slowly drop into the oil.
Repeat the process for the other potato slices.
Do not over fill the oil with bajjis as they stick to each other.
Turn them to the other side when they are golden.
Fry them on both sides until they are golden color on medium flame.
Take them out with a slotted spoon into a paper napkin to drain out the excess oil.
Make all the bajjis or fritters in the same way.
Serve them hot with sweet tamarind chutney. Or they will be delicious just as they are.
