Amaranth Raita-Thotakura Perugu Pachadi

Amaranth or Thotakura is a highly nutritious leafy vegetable. It can grow wildly in your backyard. 
Ingredients
Amaranth/Thotakura
about 2 cups of yogurt
cilantro
2 inch piece of ginger and 1/2 tsp cumin seeds to make a paste
1/4 tsp turmeric powder
salt to taste
For tempering
2 tsp oil
1/8 or less tsp fenugreek seeds
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 red chili
pinch of hing 
few curry leaves

Preparation
Wash and cut amaranth leaves finely.
Make a paste with ginger and 1/2 tsp cumin.
Chop cilantro finely.

Procedure
Beat yogurt Slightly with a whisk or in a blender. Add ginger and cumin paste to whisked yogurt. Place a medium size sauce pan on medium heat. Add oil when it is hot. Add fenugreek seeds followed by mustard, cumin, red chili(cut into  pieces), hing and curry leaves. Add this tempering to yogurt. In the same pan add amaranth/thotakura and cook for 2-3 minutes with a pinch of salt and a little water. After 2-3 minutes turn off the stove and let it cool down. Add this to yogurt when it is cooled off. Mix every thing well and adjust salt. Mix in cilantro. Enjoy with rice or chapati.
