Amaranth Rice-Thotakura Rice-Diabetic & Weight Loss Recipe-Vegan

Amaranth rice is a delicious, diabetic and weight loss recipe. It can be a vegan recipe too. Amaranth is a nutritious green vegetables. This is another easy way to use greens in your diet.
Ingredients
2 cups of white rice or brown rice
a big bunch of amaranth leaves
1 onion
1-2 tomatoes
3-5 green chilies
handful of mint/pudina leaves
handful of cilantro/coriander leaves
5 garlic cloves
few cashew nuts
salt for taste
1/4 tsp turmeric pwdr
1/4-1/2 tsp red chili pwdr
1/2 tsp garam masala pwdr
2 tsp ghee
1-2 tbsp oil
1 tbsp chana dal
1 tbsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
1 inch piece of cinnamon stick
5 cloves
3 cardamoms

Preparation
Cook 2 cups of rice with 3 cups of water.
Separate the Amaranth leaves from stems, wash them and chop roughly.
Chop cilantro finely & keep it aside.
Chop garlic roughly and keep aside.
Cut green chili lengthwise.
Dry roast or fry cashews in ghee and keep aside.
Procedure
Place a large pan on medium heat. Add 1 tsp of ghee and heat it up. Add oil after heating up the ghee. (By doing this the flavors of ghee will spread to the whole dish.) When the oil is hot, add chana dal followed by urad dal, mustard seeds, cumin seeds, cinnamon, cloves and cardamom. When the mustard seeds and cloves are popping up add green chili and garlic. When the garlic is about to change the color, add onion and a pinch of salt. Stir it once and cook it covered for a minute. Then add tomato, mint leaves and  turmeric powder. Stir it and cook it covered for 2 minutes.
After 2 minutes bring down the flame to low and add red chili powder and garam masala powder. Mix it well and then add chopped Amaranth leaves and salt. Give it a stir and cook it covered on low flame for about 5 minutes until the amaranth loses it's raw smell. When the amaranth is cooked well and loses it's raw smell, go ahead and add cooked and cooled rice. Mix the rice well with amaranth mixture. Adjust salt for your taste and add a tsp ghee and fry for a minute or two. Switch off the flame. Then add cilantro/coriander leaves and cashew nuts and mix them well. Serve it hot with your favorite raita or any chutney or it will be delicious just like that.
