This Baby Tomatoes curry is very tasty with Coconut, cashew, peanut and sesame gravy. Make it more or less spicy for your own taste by using your favorite spices. I used less oil here.
Be flexible with the spices and nuts. I took Coconut as a main ingredient in the gravy.
Coconut gives a nice smooth texture to the gravy. Coconut has a lot of health benefits.

Pinch of turmeric
Salt to taste
1 or 2 tsp oil.
Preparation
Wash baby tomatoes and keep them aside.
Chop green onions and green chilies and keep them aside.
Procedure
Take 1 tsp of oil in a big pan and turn on the stove.
heat the oil on medium heat.
When the oil is hot add coriander seeds, cumin seeds, fenugreek seeds and cardamom seeds.
Fry them on medium heat.
Then add garlic, green chili and red chili fallowed by peanuts, cashews and sesame seeds.
No need to fry coconut.
When the spices and nuts are turning light brown turn off the stove and take them out into a plate.
Let them cool down.
Again turn on the stove, add baby tomatoes to the same oil .
Add a pinch of turmeric and salt and fry on low medium heat until the tomatoes are little soft but not mushy.
Add a little water or oil only if you need.
While the tomatoes are cooking take all the spices , nuts and coconut into a blender jar along with some water.
Blend everything into a smooth paste.
When the tomatoes are little soft add this paste to tomatoes.
Rinse the blender jar and add that water also.
add some salt and amchur powder(dry mango powder)and give a mix.
Cover with a lid and let it cook on low medium heat.
After 10 -12 minutes open the lid and give a stir.
Normally you have to cook the gravy until the oil separates.
Since we did not use a lot of oil, you may not notice the oil separation.
So 10-12 minutes of cooking will be enough.
Add green onions and give a mix and turn off the stove.
Garnish with cilantro and serve with whole grain brown rice or chapathi or puri.
