Basil Capsicum Rice-Basil flavored Fried rice with Bell pepper or Simla mirch

Basil Capsicum rice is an easy recipe for lunch box or for your parties. This can be made with large bell peppers or small capsicum or mini sweet bell peppers.
Ingredients
3 cups of cooked brown rice or white rice
1 medium size onion
1 tomato
1 large bell pepper or two small capsicums or 6-8 mini sweet peppers
a big handful of fresh basil leaves
a small handful of cilantro
2 large garlic cloves
1 tsp of cumin seeds
1 tsp red chili flakes
1 tbsp dry basil leaves
1/4 tsp turmeric powder
2 tbsp oil
salt for taste

Preparation
Cook rice and cool it down.
Cut onion and capsicum into lengthy strips.
Cut tomato into small pieces.
Chop garlic into small pieces.
Chop cilantro finely.
Chop basil leaves roughly just before adding.

Procedure
Take 2 tbsp of oil in pan, and heat it on medium. When the oil is hot add cumin seeds and let them crackle. Then add chopped garlic and fry for a few seconds. Add red chili flakes. Then add onion and a pinch of salt. Fry onions for a minute. Then add chopped fresh basil leaves. Fry basil leaves with onions just for 30 seconds and add tomato. Cover and cook for 2 minutes until the tomato gets soft.  Then add dry basil leaves and capsicum. Again cover and cook for about 1 or 2 minutes. Do not over cook capsicum. After 2 minutes stir it once, add turmeric and salt. Mix them well. Then add cooked rice. Mix it well. Break down the lumps in the rice if there are any. When every thing is mixed well add cilantro and mix it again. Flavorful basil capsicum rice is ready.
