Bitter gourd pulusu or Kakara kaya pulusu is a tasty recipe. Bitter melon or Karela reduces blood sugar levels. It is good for people with diabetes.
Ingredients
2 bitter melons
1 onion
2-3 green chili
1 tbsp oil
handful of cilantro
1 tbsp homemade tamarind paste
a tiny pinch of stevia & 1 tbsp jaggery
1/2 tsp red chili powder
salt to taste
For masala paste
2 tbsp peanuts
1 tbsp sesame seeds
2 tsp poppy seeds
1 tbsp coriander seeds
3-4 cloves
2 ” piece of cinnamon
For Tempering
1 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
4 red chilies
a pinch of hing
a few curry leaves

1 tsp cumin seeds

Preparation
Wash and cut bitter melon into small pieces.
Cut the onion into lengthwise pieces.
Cut green chili lengthwise.
Chop the cilantro finely.

Procedure
Take 1 tbsp of oil in a thick bottom pan which is on medium heat. When the oil is hot add onion and green chili. Saute` for a few seconds and add bitter gourd. Add a pinch of salt and stir it. Cover it and cook for a few minutes until the bitter gourd is cooked. While they are cooking, prepare masala paste.
In a small pan take peanuts and dry roast them. When they are half done, add coriander seeds, cloves and cinnamon and continue roasting. When they are giving nice aroma, add sesame seeds and poppy seeds. Dry roast all of them and switch off the flame. When they are cooled down, make a fine paste with some water.
Check the bitter melon and onions. Stir them once and add the prepared masala paste. Add turmeric, salt, tamarind paste and red chili powder. For sweetness you may use stevia or jaggery. I added a tiny pinch of stevia and 1 tbsp of jaggery. Add some water to bring it into a loose consistency. Let it simmer and prepare the tempering meanwhile.
Heat a small pan on medium heat with 1 tbsp of oil or ghee. When the oil is hot add mustard seeds, cumin seeds, red chilies, hing and curry leaves. Add this tempering to simmering pulusu. Continue simmering for few more minutes and finish it up with finely chopped cilantro. Switch off the flame and serve it hot with whole grain brown rice.
