Broccoli Soup

Broccoli soup is not only delicious but also very healthy with its fibre and anti oxidant properties.
Ingredients
Broccoli about 2 cups with it's stems(stalks)
1 cup of onions
4 garlic cloves
A handful of cilantro
2 tsp of butter
Salt and pepper for your taste.
Heavy whipping cream(optional)
Coconut milk for vegans(optional)

Preparation
Wash broccoli and separate the florets.
Cut the stacks into small pieces.
Cut onion into small pieces
Wash cilantro very well
Procedure
Keep a pan on medium heat.
Take the butter in the pan and let it melt.
When the butter melts add garlic and onion.
Stir it and then add broccoli and cilantro.
Fry them for 2-3 minutes.
After 2-3 minutes of frying add 3 cups of water.
Let it cook on medium without covering for 5-10 minutes.
After 5-10 minutes turn off the flame and let it cool down.
After cooling blend it with a hand blender or in your blender.
Take the soup in a serving bowl and sprinkle with some freshly ground  black pepper and heavy whipping cream.

Helpful Tips
Always use the broccoli stems.
If you want to avoid butter completely skip the frying part and directly boil the vegetables in the water.

Health Information
Broccoli has anti cancer properties.
It contains more fibre and anti oxidants.
Soups are very convenient for weight loss.
