Cabbage Tomato Curry for Chapati and Puri

Cabbage Tomato Curry is spicy and delicious that can make a good combination for chapati, puri or rice.
Ingredients
1 medium size cabbage
1 large onion
3 medium size tomatoes
1 tsp ginger garlic paste
2 tsp red chili powder
2 tsp coriander cumin powder
1 tsp garam masala powder
1/4 tsp turmeric powder
salt to taste
handful of coriander leaves/cilantro
1 tsp ghee to mix at the end (optional)
For tempering
2 tbsp oil or ghee
2 tsp chana dal
2 tsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
2 large green chilies
a big pinch of hing/asafoetida
A few curry leaves

Preparation
Chop cabbage finely.
Cut onions into small pieces and green chili lengthwise.
Cut tomato finely.
Chop cilantro finely.


Procedure
In a thick bottom pan take 2 tbsp of oil or ghee and place it on medium heat. When the oil is hot, add chana dal, urad dal, mustard seeds and cumin seeds. Keep stirring. Add hing, curry leaves and green chilies also and then add ginger garlic paste. Stir it once and quickly add onion. Add turmeric powder to onions. Mix them well and cook until the onions are soft and ginger garlic leaves the raw smell. Then add tomato and give a stir. Now it is time to add spices. Add salt, red chili powder and coriander cumin powder. Mix them well. Cover it and cook until the tomatoes are soft. Then add cabbage and give a good stir. Add 1/2 cup of water and cover and cook until the cabbage is cooked and the curry oozes out the oil. Add cilantro and stir well. As a final step add 1/2 a tsp of ghee and mix well for extra flavor. Serve it hot or room temperature with rice, chapati or puri.
