Capsicum Rice-Bell Pepper Masala Rice

Capsicum Rice is very delicious and healthy recipe. Easy to prepare. It is a good recipe for lunch box.

Ingredients
1/2 stick butter
5 garlic cloves chopped finely
5 green chilies chopped finely
1 tsp mustard seeds
1 tsp cumin seeds
1 large onion
1/2 each of green, red and yellow bell peppers or capsicum
2 tomatoes cut into small pieces
1/2 tsp turmeric
2 tsp coriander powder
1/2 tsp garam masala
salt to taste
2 cups of cooked rice
1/2 cup chopped cilantro
1 tbsp or more roasted cashews
1tsp ghee
Preparation
Cook the rice and keep it ready.
Use 2 1/2 cups of water for 1 cup of rice.
Cut the bell pepper into long strips & cut the inside white membrane also into pieces.
Chop garlic & green chili into small pieces.
Cut onions & tomato.
Roast the cashews in ghee or oil.

Procedure
Melt the butter in a thick bottom pan on medium heat.
Add garlic and green chili & fry until the garlic turns light brown.
Then add mustard & cumin seeds.
When the mustard seeds are spluttering add onion and bell peppers.
Cook them covered for 1 minute. Do not over cook bell peppers.
Then add tomatoes. Add a pinch of salt. cook them covered for 2 more minutes.
After 2 minutes add turmeric, salt & coriander powder and give a mix.
Add rice after all the spices are well mixed with veggies then mix it well.
Add garam masala only if you want more spicy.
Add cilantro, give a mix, add roasted cashews and 1 tsp ghee.
Cover it for 1 or 2 min. and then serve it hot.


Helpful Tips
It is a good lunch box item. You may make with left over rice also.

Health Information
Bell peppers are high in vitamin C and flavonoids.
