Simple and easy Carrot masala rice is healthy and tasty. This can be done on a special occasions or on a casual day. It is good for lunch box and it can be done with left over rice also.
Ingredients
4 cups of cooked white rice or brown rice
2 cups of shredded carrot
1 onion
2-3 green chilies
some cilantro
3-4 tbsp of grated coconut
some cashew nuts
2 tbsp of ghee or oil
8-10 cloves
2 inch piece of cinnamon stick
2 cardamoms
1 tsp chana dal
1 tsp urad dal
1/2 tsp mustard seeds
1/2 tsp cumin seeds
3-4 tsp of chana masala powder or garam masala powder
1/4 tsp turmeric powder
salt to taste

Preparation
Cook your rice. You can watch my video "How to cook brown rice" if you want.
Shred carrot. Chop onion and cilantro finely. Cut green chili lengthwise.
Procedure
Heat the oil in a skillet which is on medium heat. When the oil is hot add cloves, cinnamon, cardamom seeds, chana dal, urad dal, mustard seeds and cumin seeds. give a stir. Also add the green chilli. Keep stirring. When every thing is almost fried then add cashews and fry all of them together. When the cashews are about to change color add onions and fry for a minute. Then add shredded carrot, salt and turmeric powder. Give a stir, cover and cook for 3-4 minutes until the carrot leaves the raw smell. Then add coconut also and fry for a minute. Add chana masala or garam masala powder and stir it well. Add cooked rice and then cilantro and give a good mix. Serve it hot with any raita.
