Cauliflower Tomato Curry - Gobi Tomato Sabzi

Cauliflower Tomato Curry is a very spicy and delicious Indian dish. Cauliflower is one of the cruciferous vegetable.
Ingredients
1 big cauliflower cut into medium size pieces
2 onions cut into small pieces
4 tomatoes cut into small pieces
some finely chopped cilantro
3tbsp oil
1 tbsp chana dal
1 tbsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
5 or 6 green chilies
2 tsps coriander and cumin powder
1 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
1 tsp ginger garlic paste
some salt to taste
Preparation
Separate the cauliflower florets and wash them very well.
Cut the onion into small pieces.
Cut the tomato into small pieces.
Chop cilantro finely.
Cut green chilies into small pieces.
Procedure
Keep a thick bottom pan on medium heat.
Take oil in the pan and heat it up.
When the oil is hot add chana dal, urad dal, mustard seeds, cumin seeds and green chilies.
Fry them till chana dal getting light brown.
Then add curry leaves and then add onions.
Add a little salt, give a stir, cover it and cook for about 2 minutes until the onions get soft a little.
After 2 minutes open the lid and add 1 tsp of ginger garlic paste.
Give a stir and again cover it and cook until the ginger garlic leaves the raw flavor.
Then add tomatoes, give a stir, cover and cook for few minutes until they get soft.
While the tomatoes are cooking mix the spices. Take turmeric powder, red chili powder, coriander and cumin powder and garam masala powder in a bowl and add some water.Do not add too much water. Add just enough.
Mix them well and add them to the tomatoes. Give a stir.
When the tomatoes have been soft, add cauliflower and some salt. Mix them well, cover and cook for 10 minutes on low medium.

After 10 minutes notice that the cauliflower has been cooked but retains the shape. If it is not cooked continue cooking for 2 more minutes.
Add cilantro and a teaspoon of ghee and mix it.
Serve it with rice or any kind of roti (Indian flat bread).
