It is a good time to make soups. Celery and Parsley soup is very nutritious as well as tasty.
Ingredients
2 cups of celery
2 cups of finely chopped parsley
1 cup cut green bell pepper or capsicum along with white portion inside
1/2 green apple cut into small pieces
1 cup onion
2 garlic cloves
1 tbsp butter
1/2 cup half and half milk or heavy cream
salt to taste
1/4 tsp black pepper
4 cups water
2 cups of celery

Preparation
Cut all the vegetables into small pieces.
Chop parsley also finely.
Procedure
In a saucepan melt the butter and add all the vegetables. Add a pinch of salt. Saute them for a minute. Add water or vegetable stock to vegetables and let it boil for 3-5 minutes. Turn off the stove and let it cool down. After cooling down, take them into the blender jar and make a fine puree. Strain it through a strainer if you want. This is optional.
In a medium size sauce pan heat the rest of the butter and add the soup. Add half and half milk or heavy cream to the soup. Use coconut milk if you are a vegan. Also use coconut oil instead of butter. Add salt and freshly ground pepper powder. Simmer for about 5 minutes. Serve it hot or warm. Enjoy!!
