Chakkilalu-Chakkili-Gluten free Diwali Snack

Chakkilalu or chakli is an Indian snack recipe. It is gluten free that you can make with brown rice or white rice flour.
Ingredients
2 cups of rice flour. Brown rice or white rice.
1 cup of urad flour
1-2 tbsp sesame seeds
1 tbsp carrom/ajwain /Vamu seeds
1 tbsp red chili powder
salt
2 tbsp hot oil
enough oil for deep frying
Preparation
Place the one hole that looks like star in the murukku maker and apply oil inside the tube. Keep it aside.
Making dough
In a bowl combine both flours and add salt, red chili powder, sesame seedsand carrom seeds. Crush the carrom seeds between the palms to release the flavor before adding. Mix the dry ingredients well. To this add 2 tbsp of hot oil and mix carefully until all the oil is incorporated into the flour mixture. Then add water slowly and start mixing the dough. The dough has to be little soft but not too soft. If it is too soft, chakli wont come out in right shape. It will break while making. It should be little tight dough. If it is too tight, the chakli can not come out easily from the murukku maker. So the consistency is important here. Apply little oil on the dough, cover and keep it aside until you get all the other things ready.

Procedure
Pressing the chakkilalu
Cover a cheese cloth or any cotton cloth on a plastic sheet to prepare chakkilalu.
Fill the chakkili tube with dough and press with fingers so that there won't be any gaps in the tube. Place the other tube on this and start pressing gently while moving it to make 2 to 3 spirals. Make all the chakkilalu on the cloth. The cloth will absorb excess moisture from chakkilalu. While you make the chakkilalu, keep the oil on low medium heat so the oil will be ready by that time you finish making them.
Frying

Drop the chakkilalu carefully into the oil and fry them on low medium flame. When you see the edges are changing color flip them to the other side. Fry them until light golden color on both sides. Remove them from oil with the help of slotted spoon. Take them onto the paper towel to remove excess oil. Enjoy spicy and crispy chakkilalu and give me your feed back.
