Whole grain wheat has many nutrients including fiber. When I make my wheat flour, I grind my whole wheat grains and use it without sifting it. So I preserve the wheat germ and wheat bran in the flour. I make my chapati with this flour. Today I am making my chapati without using any oil or ghee. It is a zero oil, diabetic and vegan recipe.
Ingredients
1 cup of whole grain wheat flour
water
1 cup of whole grain wheat flour

Preparation
Mixing the dough
Make your dough with the wheat flour by adding a little bit of water at a time. When the dough comes together, make it into a round ball and cover it and let it sit for20-30 minutes.
After 30 minutes, knead the dough for a few minutes and divide it into 6 equal portions. Take each portion and knead it between your palms and make it into a round ball. Apply dry flour and keep it covered. Continue doing with all the dough balls.
Rolling chapati
Take each dough ball onto the rolling board and roll it with a rolling pin into a round chapati. Applying dry flour whenever needed prevents it sticking to the board or the pin. Don't apply too much dry flour as the chapati gets too dry.

Place a tawa or a dosa pan on high heat. When it is hot put a rolled chapati/roti on tawa. When it is changing color slightly, invert it to the other side. Let it fry on both sides. This flour is denser than the regular chapati flour. So it may or may not puff u. Don't worry if it stays flat. It tastes great. When it is fried on both sides, transfer it into a hot pack or in a container and cover it. You may apply a little bit of oil or ghee on chapati. If you want it as an oil free chapati, just leave like that. Serve it hot with your favorite curry.
