Bittermelon fry- Kakara kaya Vepudu

Cinnamon flavored bitter melon fry is a nice way to use bitter melon. You can even make your kids eat this.
Ingredients
2 medium size bitter melons
1 tbsp brown sugar ( you may substitute it with stevia or you can use both sugar and stevia).
1 tsp cinnamon powder
oil for deep fry
Preparation
Wash and cut the bitter melon into long thin strips.
Combine or grind together brown sugar, cinnamon and stevia.
Procedure
In a small sauce pan heat some oil for deep fry on medium heat. When the oil is hot add some cut bitter melon pieces and deep fry them. You may fry them very crispy or little crispy. Fry them as you like and transfer them in a bowl lined with paper towel. When you finish frying all of them, add brown sugar and cinnamon powder. Cover with a lid and shake them well. Make sure all the pieces are coated with the powder. Crispy bitter melon with cinnamon flavor is ready.This can be served as a snack or with rice or chapati. Enjoy and don't forget to share.
