Coconut Laddu or Kobbari Lascora is a healthy sweet made out of coconut and jaggery. Try to make it with dark colored jaggery as it contains lot of good nutrients. Not only for festivals you can make it anytime since it is very easy.
Ingredients
3 cups of grated coconut
2&1/2- 3 cups of grated jaggery
Preparation
Cut the whole coconut into 2 halves with a hammer or a big knife.
Remove the coconut from the shell and cut into small pieces.
Put all the coconut pieces in your food processor and grate them finely.
Or use your own method to grate the coconut.
Roughly grate the jaggery also.

Procedure
Place a thick bottom skillet on medium flame.
Take both jaggery and coconut into the skillet and give a good mix.
Notice that jaggery starts to melt.
Keep stirring until it thickens and comes to a sticky consistency.
Turn off the stove and let it cool down.
Apply oil or ghee to your palm and take a small portion of the coconut jaggery mixture into your hand and shape it into a round ball.
Make all the laddus to your desired size.
They will be good for about 1 week in the room temperature.
