Coconut Rice is easy to make and delicious. Coconut rice can be made with brown rice or white rice. You can even make it with left over rice. Coconut rice can be a quick lunch box recipe or it can be made for your special occasions.
Ingredients
2 cups of cooked brown rice or white rice.
1 cup of grated coconut (fresh or frozen)
handful of cilantro
handful of peanuts
2 tbsp of sesame seeds
2-3 tbsp of coconut oil or any other good oil of your choice.
1 tbsp chana dal
1 tbsp of urad dal
1 tsp mustard seeds
1 tsp cumin seeds
4 green chilies
2-4 red chilies
a pinch of hing/asafoetida
curry leaves
1/4 tsp of turmeric powder
salt for taste

Preparation
Cook the rice and allow it to cool down. I used brown rice and I used 2 cups of water for one cup of rice to cook it.
Grate the coconut or defrost if you are using frozen coconut.
Cut the green chili lengthwise.
Chop cilantro finely.

Procedure
Place a thick bottom pan on medium heat. Heat 2 tbsp of coconut oil in it. When the oil is hot add chana dal, urad dal, mustard seeds, cumin seeds and green chili. When the mustard seeds start spluttering add peanuts and sesame seeds. Continue frying. Add red chili pieces, asafoetida/hing and curry leaves. Add the grated coconut and fry it for a minute. Add turmeric powder and salt. Mix them well. Then go ahead and add the cooked rice and mix it well. If there are any lumps, break them down. When everything is mix in the cilantro/coriander leaves. Switch off the flame. Serve it hot or at room temperature. Enjoy healthy coconut rice and please don't forget to give me your feedback.
