Cranberry Rice-Variety Rice with Cranberries-Cranberry Pulihora

Cranberry Rice is a simple, easy to make, healthy and delicious recipe. Surprise your family and friends with this variety rice for thanksgiving dinner. This can also be good for your lunch box.

​Ingredients
4 cups cooked brown basmathi rice
1 cup cranberries (fresh or frozen)
a handful of cilantro
1/4 tsp turmeric powder
salt to taste
For tempering
2 tbsp of oil
a handful of peanuts
1 tbsp chana dal
1 tbsp urad dal
1 tsp mustard seeds
1 tbsp sesame seeds
1 tsp or more crushed red pepper or 2 or more red chilies
a big pinch of hing/asafoetida
a few curry leaves

Preparation
Get 4 cups of cooked brown rice or white rice ready.
Wash cranberries and crush them in food processor or paste them in your blender.
Wash and chop cilantro finely.

Procedure
 In a big skillet or sauce pan take oil and heat it up on medium heat. When the oil is hot fry peanuts and add chana dal, urad dal and mustard seeds. When the mustard seeds start crackling add sesame seeds, crushed red chili hing and curry leaves. Add your crushed cranberries and turmeric powder. Mix it well and cook them for a minute. Add salt and mix it well. Add cooked rice and mix it very well. Add cilantro and mix it well finally to get your healthy and delicious cranberry rice. Enjoy it as a side dish.


Health Information

Cranberries are high in Vitamin C.
They are loaded with anti oxidants.
They also contain the essential trace mineral  Iodine.
