Crispy Bitter melon fry with less oil is a diabetic friendly recipe. Usually for a crispy fry we need to use a lot of oil. But in this you don't have to use a lot of oil. It is still crispy.
Ingredients
3 medium bitter melons/bitter gourd/karela/kakara kaya
about 1 1/2 cups of sour buttermilk
salt
turmeric powder
a small pinch of stevia or 1 tsp jaggery or brown sugar
For Tempering
2 tbsp oil
1 tsp of chana dal
1 tsp of urad dal
1/2 tsp mustard seeds
1/2 tsp cumin seeds
a pinch of hing or asafoetida
1 onion
1/2 tsp amchur powder or dry mango powder
1 tsp red chili powder
Preparation
Cut bittermelon into small pieces.
Chop cilantro finely.
Take bittermelon pieces into a vessel and add buttermilk, a little salt, turmeric powder, stevia or brown sugar. Tamarind juice can be used in the place of buttermilk. Let it boil on medium flame for 5-10 minutes. Let it cool down.
Drain the water.

Put a thick pan on medium flame.
Add 2 tbsp oil to the pan.
When the oil is hot add chana dal, urad dal, mustard seeds and cumin seeds.
Add a pinch of hing or asafoetida.
Add onion. Give a stir. Add a pinch of salt.
Fry the onions for a minute or two.
Then add the drained bitter melon.
Fry them on low to medium flame for about 10 minutes. Keep stirring in between.
After 10minutes you will notice the bitter melon is getting light crispy.
At this point add salt and stevia or jaggery or brown sugar for your taste. Remember we already added these earlier. So be careful when adding.
Continue frying till they are crispy enough and add amchur(dry mango) powder and red chili powder.
Turn off the stove. Add cilantro and mix it well.
Serve it with whole grain brown rice or chapati.
Helpful Tips
Do not fry in high flame. Fry in low or low medium to get crispy bitter melon without using a lot of oil.

Bitter Melon is good for diabetes. Use bitter melon in your cooking very often to control blood sugar levels.
You can even come off from insulin shots by drinking bitter melon juice regularly. But it should be done under the supervision of a health care professional only. Do not do it by your self. Do enough research about bitter melon.
