Cucumber Chutney-Dosakaya Pachadi

Dosakaya Pachadi is a tasty healthy Indian Raw Chutney.
Ingredients
1 yellow cucumber ( Indian cucumber) 
2-or 3 garlic cloves
3 or more green chilies
3 or more red chilies
1 tsp jaggery
1 tsp tamarind
a handful of chopped cilantro
salt to taste
For Tempering
1 tbsp oil
1 tsp urad dal
1/8 tsp fenugreek seeds
1 tsp mustard
1/2 tsp cumin seeds
a pinch of hing (asafoetida)
a few curry leaves
a big pinch of turmeric powder


Preparation
Wash the cucumber and peel it. Cut it into very small pieces.
If you do not have the tamarind paste, you may soak a small lime size tamarind in water.

Procedure
Keep a pan on medium heat with oil in it.
When the oil is hot add urad dal, fenugreek seeds,mustard seeds and cumin seeds.
When the urad dal is getting brown add red chili and hing (asafoetida)
Then add garlic and green chili and saute them for 30 seconds.
Then add curry leaves and turn off the stove and add turmeric powder.
Let them cool down for a few minutes.
When it is cold take green chili, red chili and garlic to the food processor.
Add jaggery, tamarind paste and salt and run the food processor.
Make a fine paste with all these.
Now we just need to combine everything together.
To the tempering in the pan add cucumber pieces, cilantro and the spice paste that we just made in the food processor.
Mix them all together and adjust the salt.
Enjoy with rice or chapati.

Helpful Tips
Cut the cucumber into very small pieces so that every piece will get
the flavors from the spices.
You can make less spicy for a small portion for your kids.
After adding cucumber and cilantro to the tempering, add only a small portion of the spice paste and mix it well. Now this is less spicy but has all the taste. Take a small portion out for your kids and then add the rest of the spice paste.
When you are making tempering, if the pan is thick, do it on medium and if the pan is not thick do it on low flame.

Cucumber has a very cooling effect on your body.
This chutney is a raw food, except the tempering.
