Dal fry with chana dal

Dal fry is simple and delicious. It is a great combination with rice or chapati.
Ingredients
1 cup chana dal
1 tbsp coconut oil
1 small onion, 2 tomatoes,3-4 green chilies, cilantro, curry leaves.
1 inch cinnamon, 4 cloves, 1/4 tsp cardamom seeds, a small javetri/ Japatri/mace.
Salt, 1/4 tsp turmeric powder and1+1/2 tsp red chili powder.
1 tsp ginger garlic paste, 1 tsp coriander cumin powder, 1 tsp garam masala powder.
2 tsp ghee, 1 tsp mustard seeds, 1 tsp cumin seeds, a pinch of hing/asafoetida.
Preparation
Wash and soak chana dal for about 30 minutes. Then cook it in the pressure cooker for 3 whistles. Keep it aside.
Cut the onion and tomato into small pieces and keep them separately.
Cut green chili into lengthwise.
Chop cilantro finely.
Procedure
Place a thick bottom pan on medium heat. Add coconut oil and let it heat. When the oil is hot add cinnamon, cloves, cardamom and javetri. When they are fried add green chili and onion. Stir it once and add ginger garlic paste. Stir it again, cover and cook for a minute. Then add tomato. Stir it and add salt, turmeric powder, red chili powder and coriander cumin powder. Add 1/2 a cup of water. Cook for 2-3 minutes covered.

Add cooked chana dal, mix it well with tomato onion mixture and lightly mash it with ladle. Add 1 cup of water and 1 tsp garam masala powder. Cook it covered for 5 minutes on medium. Add some cilantro.

Tempering
In a small pan heat up ghee on medium. Add mustard seeds, cumin seeds, hing and curry leaves. Switch off the flame and add 1/2 tsp of red chili powder. Quickly stir it and add it to dal. Sprinkle cilantro and mix it well. Delicious dal fry is ready with the flavors of ghee.

Note
Do not heat up after adding red chili powder as it burns and get black. Add red chili powder only after turning off the flame.
