Donda kaya Ullikaram-Tindora with Onion Masala-Ivy Gourd

Dondakaya Ullikaram is a very tasty Andhra recipe. The flavors of onion makes this curry very special.

Ingredients
about 1 pound Dondakaya/ Tindora/ Ivy gourd
1 onion
4 or more red chilies
2 tbsp roasted chana dal
1 tbsp coriander seeds
1 tsp cumin seeds
2 tbsp oil
1/4 tsp turmeric powder
salt to taste

Preparation
Wash and cut dondakaya/ tindora /ivy gourd into thin strips.
Cut onion into big pieces and in the food processor make it into a coarse paste.
Dry roast red chili, cumin seeds and coriander seeds until they give nice aroma. When they are cold grind them into a fine powder. Keep them aside.

Procedure
Heat up 1 tbsp of oil in a thick bottom pan or in a cast iron skillet. When the oil is hot add cut dondakaya/ tindora and give a stir. Add a little salt and turmeric powder. Give a stir, cook for 3-5 minutes covered. Add onion paste and mix it well. Now fry this onions uncovered, until they leave raw smell and change the color. Add dry spice powder and mix it well. Fry for 3-5 minutes after adding the dry spice powder. Turn off the stove. Enjoy with rice. Please share your experience with me.
