Double Ka Meetha with Whole Grain Bread & Jaggery Syrup

11/8/2015

Double Ka Meetha is a Hyderabadi sweet. It has a very rich taste with milk, ghee and sugar. Here I am sharing a healthy version of it. I hope you all like it.
Ingredients
2 multi grain bread slices (You may use whole wheat or white bread also if you want.
1 cup of whole milk
1/2 cup jaggery
1/4 cup of ghee (You may mix some oil if you want)
3 cardamoms
1 tbsp crushed cashews
1 tbsp crushed almonds
1 tbsp golden raisins

Preparation

Open the cardamom seeds from pods and powder them finely.
Crush the cashews and almonds into small pieces.

Jaggery syrup
Take 1/2 cup of jaggery and 1/2 cup of water into a small vessel and bring it into a boil in a low medium flame. When it comes to a one string consistency switch of the flame and keep it aside.

Rabadi
Take one cup of whole milk into a small pan and slowly bring it to a boil. Keep boiling until it reduces to 1/2 cup. Keep stirring in between. You may add 2 tbsp of jaggery if you want for more sweetness.

Toasting & Cutting Bread
First toast the bread on dosa pan/tawa or in the toaster oven to make the bread dry. So the bread won't absorb to much ghee when we fry. Then cut each bread diagonally to make four pieces from each bread. Do not have to cut the crust unless you want to.

Frying Bread
Heat 1/4 cup of ghee in a small pan on low medium heat. When the ghee is hot, fry each bread piece on both sides until they are golden brown. Transfer them on to a plate. In the left over ghee fry the cashews, almonds and raisins.

Procedure
Pour the jaggery syrup on the bread pieces in the plate. You can notice that they are absorbing the syrup.
Arrange the bread pieces on your serving plate and pour the Rabadi over them.
Sprinkle the nuts and raisins. Enjoy.
