Easy Dondakaya Vepudu-Easy Tindora Fry-Kovakkai

Dondakaya Vepudu or Tindora Fry is a simple and easy recipe for everyday cooking.
Ingredients
1 lb. Dondakaya/Tindora/Ivy gourd/Kovakkai
2 tbsp oil
1/2 tsp cumin seeds
1/2 to 1 tsp red chili powder

Preparation
Wash Tindora before you cut them.
Then cut them into small circles.

Procedure
Place a cast iron pan on medium heat with 2 tbsp of oil. When the oil is hot add tindora pieces and give a stir. Cover it and cook for about 3 minutes. After 3 minutes stir it once and continue frying without covering. Stir in between. When they are getting crispy stir continuously. Make sure you have oil in the pan. Fry until you get desired crispiness. Add salt and mix. Crush cumin seeds in your hand and add to tindora. Switch off the flame and add red chili powder and give a good mix. Do not fry anymore after adding the red chili powder as it gets burned. Enjoy wit rice.

Helpful Tips
Use a thick bottom pan and fry on low medium flame. So you will get nice crispy tindora without burning on the bottom. Here I used cast iron pan which is thicker than normal stainless steel pan. So I fried on medium heat.
Add red chilli powder only after turning off the flame.
