An easy Ridge gourd Curry or Simply Beerakaya Popu is a simple variety for everyday cooking.
Ingredients
1 lb. ridge gourd
1/2 to 1 tsp red chili powder
1/2 tsp coriander powder(optional)
1/4 tsp turmeric powder
salt
handful of cilantro
For tempering
1-2 tbsp oil
1 tsp chana dal
1 tsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
2-4 green chilies
2-4 garlic cloves
a pinch of hing
few curry leaves

Preparation
Wash the ridge gourd and slightly peel at the ridges. Cut them into small pieces.
Cut the green chili lengthwise.
Finely chop the cilantro.

Procedure
Take 1 or 2 tbsp of oil in a thick bottom skillet and heat it on medium heat. When the oil is hot add chana dal followed by urad dal, mustard and cumin seeds. When the mustard seeds are spluttering add green chili and garlic. Keep stirring. When the chana dal is getting light brown add hing and curry leaves. Stir it once and add ridge gourd pieces. To this add turmeric powder and salt. Give it a good mix cover it and cook for 3-4 minutes.
After 4 minutes check it and stir it once. If it is not cooked, continue cooking for few more minutes. After 4 or 5 minutes the ridge gourd pieces should be done. Add red chili powder according to your taste and give it a good mix. You may also add 1/2 tsp of coriander powder if you prefer. Add cilantro also. You may add 1/2 a tsp of fresh homemade ghee for a wonderful taste. But it is optional. Switch off the flame. Serve it with whole grain brown rice or whole wheat chapati. Enjoy.
