Ginger Raita (Allam Perugu Pachadi) gives very good relief from constipation and upset stomach. It is good even for nausea or when you have a bad taste in your mouth after a fever.
Ingredients
2 cups of butter milk . 3-6 inch piece of ginger Some chopped cilantro or coriander leaves. Some salt to taste. For tempering 2 tsp oil 1/8 tsp fenugreek seeds 1/2 tsp mustard seeds 1/2 tsp cumin seeds 2 red chilies-cut into small pieces a pinch of hing 1/8 tsp turmeric powder a few curry leaves |

Preparation
Chop cilantro finely.
Cut the ginger into small pieces.
Prepare buttermilk and keep it aside.
If you do not have butter milk take 1 cup of yogurt and dilute it with 1 cup of water.
Procedure
Take buttermilk and ginger into the blender jar and blend it until the ginger is completely crushed and it is foamy.
If you are using yogurt, take yogurt, water and ginger into the blender jar and blend it until the ginger is completely crushed and the liquid is foamy.
Take this into a vessel and add cilantro or coriander leaves and salt.
Now the raita is ready for tempering.
Tempering
Take oil into a small pan and keep the pan on medium flame.
When the oil is hot add fenugreek seeds followed by mustard and cumin seeds.
When the mustard seeds are spluttering add crushed red chili.
When the red chili is about to change the color quickly add hing and curry leaves.
Turn off the stove.
After turning off the stove add turmeric powder.
Add this tempering to the raita that we just prepared.
Raita is ready to be served with whole grain brown rice.
Helpful Tips
When you are making this for children use less ginger because children may not tolerate the strong taste of ginger.
