Fresh organic Green Tomato curry is very delicious which you should give a try.
I made this curry with my organic tomatoes from my garden. Try this curry and tell me how you like it.
Ingredients
6 med. size green tomatoes
1 onion
6 or more green chilies
few curry leaves some chopped cilantro
a few mint leaves(optional)
sat to taste
For tempering
2 tbsp of oil
1 tsp chana dal
1 tsp urad dal
1/8tsp fenugreek seeds
1/2 tsp mustard seeds
1/2 tsp cumin seeds
a pinch of hing or asafoetida
1 tsp ginger garlic paste
1 tsp cumin and coriander powder
Preparation
Wash the tomatoes well and dice them.
Cut the onions into small pieces.
Cut the green chili length wise.
Chop cilantro finely.

Procedure
Put a thick bottom skillet on medium flame.
Take the oil in the skillet.
When the oil is hot add chana dal, urad dal, mustard seeds and cumin seeds. Give a stir. And add hing(asafoetida)
When the mustard seeds are spluttering and the chana dal s getting brown add green chili and give a stir.
Then add onions. Give a stir. Add a pinch of salt and ginger garlic paste to onions, stir again.
Cover and cook for about 3-4 minutes on medium heat.
After a few minutes when you check, you will notice that ginger garlic paste loses the raw flavor.
Add green tomatoes and a few mint leaves. Adding mint leaves is optional. Lot of people doesn't like to add mint leaves. This is just my preference.
Give them a stir, cover again and cook for 5 minutes on medium heat.
After 5 minutes open the lid and give a stir.
Add coriander cumin powder and salt. Give a stir again.
Cover it and cook again for a few minutes until the tomatoes are cooked.
When the tomatoes are well cooked add cilantro and mix every thing well.
It tastes wonderful with the flavors of mint leaves and coriander cumin powders.
Enjoy this curry with whole grain brown rice or chapati or puri.

Helpful Tips
In tis curry I did not use red chili just to maintain the green color. But you can use red chili or chili powder if you want.
