Healthy Hearts for Valentines Day with Veggie Dip

If you are looking for a healthy recipe for valentines day, here is one. Beautiful healthy hearts with beetroot and radish. And a nice veggie dip with cashew nuts and yogurt. This looks pretty on your dinner table.

​Ingredients
One round big beetroot
One small radish

For dip
1/2 cup of cashew nuts soaked in water.
1 cup or more yogurt
3 garlic cloves(leave it out if you don't like garlic)
Salt and pepper
1 tbsp jaggery or honey(optional)
Beetroot and radish cuttings after cutting the heart shapes.

Preparation
Cut beetroot into slices. Cut these slices into heart shapes. You can use a sharp cookie cutter. If you don't have a cookie cutter, cut it with knife. You may mark a heart shape on the slice with a tooth pick and cut it with a knife.
You may also cut it with scissors just like you cut paper. Here also you may mark with tooth pick or you can cut it directly. Save these extra pieces.
Arrange these hearts on a plate with a small bowl in the center for the dip.
Procedure
Making the dip
Take the extra pieces from beetroot and radish cuttings after cutting the heart shapes into a blender jar. Add garlic, salt and pepper and chop them finely. Then add yogurt and jaggery or honey and blend it into nice and smooth. Pour this in the bowl. Enjoy these healthy hearts with your Valentines day dinner.
