2 cups of whole wheat flour
1/2 cup flax seed powder
1/2 cup wheat germ
1-2 tsp of butter
1-2 tsp of oil
about 1&1/2 cups of warm water
Preparation
Grind flax seed and wheat germ separately into a fine powder.
Mix wheat germ powder and half of the flax seed powder to whole wheat flour.
Give a mix. Mix the butter into the flour mixture.
Add warm water slowly to make a dough with all the flour mix.
Keep adding water slowly until it comes together and forms a dough.
Add 1-2 tsp of oil to it and start kneading for about 10 minutes.
Then apply a little oil to the dough and keep it covered for an hour. Or at least 20-30 minutes.
After 1 hour,knead the dough one more time and divide it into lemon size balls. I managed to make 10 balls with this quantity. Press each ball between your palms to make a smooth ball and make it into a patty. Apply dry flour to each patty and keep them aside covered. Take a patty onto your rolling board or rolling stone and start rolling with the rolling pin or rolling stick. Make it into a round shape. You can add dry wheat flour as needed to move chapati easily while rolling or when it is sticking. Bring the flax seed powder that we kept aside earlier. Sprinkle some on the round chapati and fold it to the center to form a half moon shape. Sprinkle again and make another fold. Now it looks like a triangle with one side round. Press it lightly. Dust it with some dry flour and start rolling again. This time you may make it into a triangular shape or round shape. I made it into a triangular shape because that is the traditional way of making chapati. Continue making all the chapatis and cover them with a damp cloth to protect them from getting dry outside.
Keep a cast iron pan or tawa on high heat. When the pan is hot put one chapati on the pan and let it fry until you see small bubbles on the top. Then you flip it to the other side and let it puff up. You may press the edges slightly with the help of a spatula to make it puff. Apply little ghee or oil on both sides and put it in a air tight container. Continue making all these the same way. Soft chapatis with high fiber are ready. You can enjoy with any curry. Click here for curries.
