Always have a piece of ginger on hand. Here is a simple way to store and freeze ginger.
Preparation
Wash your ginger. You do not need to peel ginger if the skin is looking. Peel the skin partially only the areas that are soiled or damaged. After peeling partially wash it again and dry it on a kitchen towel. Take them on a plate and keep them in your freezer for about 15-20 minutes. Now they are freezing individually. Bring them out and put them in a container or zip lock bag and store it in the freezer again. When you take them out they don't stick to each other because they are individually frozen. Don't forget to put them back in the freezer.
