Each spice used in here has its own benefits. Idli Podi or Karappodi is also called Dhaniyala Podi. It is a popular side dip or dry chutney for Idli or Dosa. What a good way to use the spices.
Ingredients
6-8Red chili
1/2 cup of Coriander seeds
1 tbsp of Cumin seeds
1/4 cup of Chana dal
1/4 cup of Urad dal
1 tbsp sesame seeds
1/2 tsp fenugreek seeds
3 big Garlic cloves
1 small lemon size tamarind
1 tsp oil
A big pinch of hing
A pinch of turmeric powder
A few curry leaves
salt to taste

A few curry leaves

Preparation
Clean the coriander seeds and cumin seeds by removing any impurities. You may cut the garlic into small pieces. Keep all the measured ingredients close to the cooking area, so you don't have to run for anything in the middle.
Procedure
Place a medium size sauce pan on medium flame. If you are using a thin pan, keep it on low flame. When the pan is hot add 1 tsp oil. When the oil is hot first add chana dal, urad dal and red chili. Keep stirring. Then add coriander seeds,cumin seeds, curry leaves and garlic cloves. Keep stirring. When chana dal is about to change color add sesame seeds and tamarind.. Continue stirring until they are turning into light brow. You will notice a nice aroma in your kitchen. You will also notice the curry leaves get crispy. Turn off the stove. Let them cool down. When they get cold make them into a slightly coarse powder by adding turmeric powder, hing(asafoetida) and salt. This will be a dry chutney for idly or dosa. Store this in an airtight container and it will be good for 2-3 months. Serve it with idli or dosa along with a little ghee on it.

Use any blender, mixer or a coffee bean grinder to make a slightly coarse powder.
