Jeera rice with brown rice-Cumin flavored rice-Vegan option

Jeera rice with brown rice or Cumin flavored rice is an easy recipe and very tasty. It will be a great combination with gravy curries like palak paneer, shahi paneer etc.
Ingredients
2 cups of brown or white rice
1 tbsp roasted cumin seeds
3 tbsp ghee or oil (Vegans use oil)
2 tbsp cumin seeds/Jeera/Jeela kara
6-8 cloves
1 inch piece of cinnamon
3 cardamoms
1 bay leaf
4 green chilies
1 red chili
few cashew nuts
few curry leaves
salt to taste
handful of cilantro or coriander leaves

Preparation
Cooking rice
Wash the rice thoroughly for 2-3 times. Cook the rice and when it is done, transfer into another bowl and cool it down.
For 2 cups of brown rice use 3 and 1/4 cup of water.
For 2 cups of white rice use, 3 cups of water.
Keep the cooked rice aside.
Dry roast 1 tbsp of cumin seeds. When they are cold, ground them into a coarse powder. Keep it aside.
Cut the green chili lengthwise.
Chop the cilantro finely.

 
Procedure
Place a thick bottom skillet on medium heat with oil or ghee. When the ghee is hot add cumin seeds and let them puff up. When the cumin seeds are puffed up add cloves, cinnamon stick, cardamom seeds, bay leaf and stir it once. Add green chili, red chili, cashews and curry leaves. Keep stirring. Add the cooked rice and mix it well. Add salt and mix it well. When everything is mixed well, add cilantro and mix it well. Finish up by adding roasted and coarsely ground cumin seeds and give it a final mix. This Jeera rice can be served with gravy curries like palak paneer, shahi paneer etc. It will be tasty by itself.
