Lemon rice is a traditional South Indian recipe. Lemon rice is very easy to make and delicious. The sesame seeds give a nice nutty flavor in each bite.
Ingredients
1 or 2 tbsp peanuts
1 tbsp chana dal
1 tbsp urad dal
1/8 tsp fenugreek seeds
1 tsp mustard seeds
a few green chilies
a few red chilies
a few curry leaves
a pinch of hing or asafoetida
1 tbsp sesame seeds
about 1/2 tsp turmeric powder
salt to taste
sesame oil
2 cups of rice
about 1 and 1/2 lemons
1 or 2 tbsp peanuts
1 tbsp chana dal
1 tbsp urad dal
1/8 tsp fenugreek seeds
1 tsp mustard seeds
a few green chilies
a few red chilies
a few curry leaves
a pinch of hing or asafoetida
1 tbsp sesame seeds
about 1/2 tsp turmeric powder
salt to taste
sesame oil
2 cups of rice
about 1 and 1/2 lemons
Preparation
Cook 2 cups of rice with 3 cups of water.
Squeeze out the lemon juice and remove the seeds.
Cut the green chili & red chili into small pieces.
Procedure
Transfer the cooked rice into a large pan.
Pour the lemon juice over the rice.
Add some salt, turmeric powder and 2 tsp oil.
Mix it well.
Heat the oil in a small pan on low medium heat.
When the oil is hot add peanuts, chain dal, urad dal, fenugreek seeds, mustard seeds and then green chili.
When mustard seeds start spluttering add green chili, red chili, hing, curry leaves and finally sesame seeds.
Remove from heat when red chilies changing color.
Add this seasoning to the prepared rice immediately.
Mix it until the seasoning or tempering is well mixed with rice.
Check the salt once again.
Useful Tips
Enjoy the lemon rice with a small cup of yogurt on the side.
Make as a lunch box item or for breakfast.
You can also make it with left over rice.
Use only freshly squeezed lemon juice. Do not use the store bought bottles.
