Mango Avocado & Chickpea Salad

Mango Avocado and Chickpea Salad is a vitamin rich Protein rich and anti oxidant rich food. Adding some lemon juice and agave nectar  makes it delicious. The savory taste and creamy texture of avocado is very enjoyable.
Ingredients
1 avocado
2 cups of mango (slightly sweet mango will be good)
about 2 cups of chickpeas
a handful of walnuts
1 or 2 tsp fresh lemon juice
1 or 2 tsp honey or agave nectar for a vegan version.
1/4 tsp dry ginger powder(optional)


Preparation
Wash and soak chickpeas in water for 4 hrs and boil them for 10 minutes.
Cut mango and avocado into small pieces.
Chop and dry roast walnuts. You can leave them raw if you want.

Procedure
Mix mango, avocado, chickpeas and walnuts in a salad bowl and squeeze some fresh lemon. Add some agave nectar and dry ginger powder. Give a good mix.

Helpful Tips
If you want a Raw version of salad, do not boil chickpeas.
If you want you can sprout the chickpeas to get more nutrients.

Chickpeas are full of protein and fibre.
Mangoes are a rich source of vitamin A and C and antioxidants.
Avocado contains lot of fat which is a good fat with lots of health benefits.
Avocado provides large number of antioxidants.
It has anti inflammatory and anti cancer properties.
It regulates blood sugar levels and it promotes heart health.
