Mango Sheera with Jaggery-Sooji Mango Halwa

Mango Sheera is an Indian delicacy made out of semolina and mango. For a healthy version I used jaggery and homemade organic ghee.
Ingredients
1 cup Sooji/Semolina/Upma Rava
1 cup jaggery
1 cup ripe mango pieces
1 cup milk
1 cup water
4-5 tbsp ghee
1 tbsp chopped cashews
1 tbsp chopped almonds
1 tbsp raisins
5 cardamoms

Preparation
Make a chunky smoothie with milk, jaggery and mango pieces.
Coarsely powder the cardamoms.
Procedure
Place a thick bottom pan on medium heat with 1 tbsp of ghee. When the ghee is hot add cashews and almonds and fry them. When they are about to change the color add raisins and fry them all until the nuts are golden brown in color and the raisins are puffed up. Transfer them into a plate.
In the same pan take sooji/semolina/upma rava and fry until you smell a nice aroma and you see slightly brown color. Bring down the flame to low.
Then add the mango smoothie that you made earlier. Mix it well and bring the flame back to medium or low medium. Add 1 cup of water also slowly while you stir with other hand. Let it cook and absorb all the liquid. Once it starts getting thick add ghee and mix well. I added 4 tbsp of ghee altogether. If you want you can add one more tbsp of ghee.
Add cardamom powder and fried nuts and raisins. Mix them well. Serve this at room temperature.
