Masala Dosa is one of the popular South Indian breakfasts. Crispy Masala Dosa is served with Coconut Chutney and Ginger Chutney or with Sambar.
Ingredients
1 cup Urad Dal
1 cup Whole Grain Brown Rice
1 tbsp Fenugreek Seeds.
For stuffing

Preparation
Take urad dal, brown rice and fenugreek seeds into a bowl and wash them thoroughly.
Pour some fresh water and soak them for 4-5 hours.
Then drain them and take them into a blender jar and blend them into a smooth batter. You may add some water also but do not add too much water.
Take the batter into a big vessel, cover it and leave it over night or alleast 6 hours for fermentation.
After 6 hours or overnight notice that the batter has risen.
Add salt to the matter and enough water if needed to bring it to the right consistency. It should be in a pouring consistency like a pancake batter.
Now it is ready to make Dosa.

Take a paper napkin and fold it twice. Put a few drops of oil on the napkin and rub it on the pan to get a thin layer of oil.
Plain Dosa
When the pan is hot, take a ladle full of batter, put it in the center of the pan and spread it in a circular motion.
Now you have a dosa in the shape of a full Moon.
You may do it as big as you can. But if you are doing it for first time do small circles.
Put some oil or ghee or butter around the circle and in the middle.
Let it cook on medium or low medium.
Once you see it is changing color and at the same time it is cooked on the top it is time to remove from the pan.
Slowly loosen up dosa from the pan starting from edges with the help of a stainless steel spatula.
Once it is loose from pan fold the dosa and put it in a plate.
Your plain dosa is ready.
Masala Dosa
For Masala Dosa follow the same procedure.
Take a ladle full of batter in the center of the pan and spread it in a circular motion.
Put some oil or ghee around the edges and on the surface of the dosa.
Take some Potato Masala Curry and put it in the center of dosa length wise.
Put some ghee on the curry.
Once it is changing color into golden, it is time to remove.
Fold Dosa from one end on the curry and roll it again in the same direction.
Take it into a serving plate and serve it hot with Coconut Chutney and Ginger Chutney or with Sambar.
Helpful Tips
Do not turn dosa to the other side if you want crispy dosa. Cook it one side only by adjusting the flame so that it cooks on both sides.
Do not put oil on the pan before you make dosa. You can't spread dosa easily. Just make a layer of oil by rubbing with a paper napkin with a few drops of oil on it.
If the pan is too hot you will not be able to spread dosa.
Health Information
By taking 1 cup of whole grain brown rice for 1 cup uad dal, you will be getting both protein and carbohydrate in your breakfast.
Fenugreek seeds are good source of vitamins and minerals. So always use them in your dosa and idli batter.
Non stick pans release toxic fumes which you will be breathing while you cook. Cast iron pans are a good alternative over non stick pans.
