Masala sandwich stuffed with potato onion curry for breakfast and lunch box. This easy recipe can be made with any leftover curries.
Ingredients
Whole wheat bread or multi grain bread
2 boiled potatoes
1 small onion
few fresh mint leaves(optional)
a pinch of salt
a pinch of turmeric powder
handful of cilantro
1 tsp lemon juice (or tamarind paste)
For tempering
1 tbsp oil
1 tsp chana dal
1 tsp urad dal
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 green chilies
2 red chilies
a pinch of hing/ asafoetida
few curry leaves

Preparation
Boil 2 potatoes, peel them and cut them into small pieces.
Cut the onion into small pieces.
Finely chop the green chili.
Finely chop cilantro.
Squeeze some juice from fresh lemons.

Procedure
Curry for filling
Place a pan on medium heat with 1 tbsp of oil or ghee. When the oil is hot add chana dal, urad dal, mustard seeds and cumin seeds. Stir it once and add green chili. Keep stirring. When the mustard seeds are spluttering, add hing and curry leaves. Add onion, a pinch of salt and a pinch of turmeric powder. You may also add a few mint leaves. Cover it and let the onions fry for 2 minutes. Now it is time to add the boiled potatoes. Add enough salt and lemon juice. Mix it well and add finely chopped cilantro. Mix it again and keep it aside.
Making Sandwiches
Place 2 bread slices on a hot tawa or pan. When they are roasted, spread the potato curry on the roasted side of the bread slice. Cover with the other slice by facing the roasted side towards the curry. Place the sandwich back on tawa and press it gently with spatula so that the curry will stick to the bread and won't come out. You may use any other leftover curry for filling. Fry on both sides with some butter. Vegans may use coconut oil. If you do not want to use any oil just skip it and roast it on both sides. Serve it hot with tomato sauce or green mint chutney. Masala sandwiches are great for breakfast or lunch box.
