Matar Paneer Recipe with Useful Tips-Nut Free

Matar Paneer is an Indian delicacy which is made with green peas and paneer (Indian cottage cheese) with tomato onion sauce.
Ingredients
1 large onion red or white
3 medium tomatoes
a handful of cilantro
1 cup green peas
1 cup or more paneer
1-2 tsp ginger garlic paste
1 inch cinnamon stick
5 cloves
3 cardamoms
2 tsp coriander cumin powder
2 tsp red chili powder
1/2 tsp turmeric powder
1/2 -1 tsp garam masala powder
2 tbsp kasuri methi/dry fenugreek  leaves
salt for your taste
1/4 cup heavy cream (optional)

Preparation
Cut the paneer into small pieces and shallow fry them in oil or ghee.
Cut onion and tomato into small pieces separately.
Chop cilantro finely.


Procedure
In a thick bottom pan take 2 tbsp of oil and heat it up on medium heat. When the oil is hot add cinnamon stick, cloves and cardamom seeds and fry them. Then add onion and fry with a pinch of salt. When the onions are little soft add ginger garlic paste and fry until ginger garlic paste leaves it's raw smell. Add tomatoes and cook them until they are soft without covering. If you don't cover they retain the color. You may add a little water so that they don't stick to the bottom of the pan. Turn off the stove when the tomatoes are soft. Let it cool down. When it is cooled off make a fine puree and keep aside.
In another pan take 2 tbsp oil or butter and heat it up. You may use the same pan that you used for onion tomatoes after rinsing.
Add cumin seeds to oil and let them crackle. Then add green peas. Quickly shield a lid over the pan, otherwise the oil will splatter allover. Saute the green peas for a couple of minutes so that they don't taste raw. Then add the tomato onion gravy/puree and stir it well. Rinse the blender/mixer jar with 1/2 cup of water and add that water also. Add spice powders coriander cumin powder, red chili powder, turmeric powder, dry fenugreek leaf powder and salt. Mix them well. Let this cook slowly. After about 3-4 minutes add garam masala powder and mix it well. Add your fried paneer pieces also and let it cook on low medium for about 10 minutes. You will notice that oil is oozing out. Add heavy cream and mix it with gravy. Garnish with cilantro. Serve it with chapati, puri or naan. It can also be served with jeera rice, fried rice, brown rice or white rice. Enjoy!
