Methi Masala Moong Srouts-MMMSprouts-Weight loss and diabetic

As we all know that sprouts are highly nutritious. Methi sprouts are especially good in controlling blood sugar levels. Sprouts are high in protein and fiber. So they are great for weight loss.
Ingredients
1/4 cup of whole moong
less than 1/4 cup of methi/fenugreek seeds
1/2 of medium size onion
1 small carrot
2-3 tbsp grated coconut
a handful of cilantro
a pinch of turmeric powder
salt to taste
1 tbsp lemon juice (optional)
For Tempering
1 tbsp oil or ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1-2 red chilies
few curry leaves
a pinch of hing/asafoetida
Preparation
Sprout the moong and methi. Click here to see how to make Sprouts.
Cut the onion finely.
Wash and grate the carrot.
Finely chop cilantro.

Procedure
Place a medium size pan on medium flame with 1 tbsp of oil. When the oil is hot add mustard seeds and cumin seeds. Keep stirring. When the mustard seeds are spluttering, add red chili by cutting into small pieces. Add curry leaves and hing/asafoetida also. Then add onion and stir it. Fry the onions just for a minute. Then add sprouts and stir it once. Add turmeric powder and salt. Stir it and add just 2 tbsp of water. Cover it and cook on low medium for just 2 minutes.
After 2 minutes, stir it once. You will notice that the sprouts are cooked slightly. Go ahead and add grated carrot, coconut and cilantro. Mix them well. Adjust salt. Add 1 tbsp of lemon juice if you want. It is optional. Healthy methi masala moong sprouts are ready. Serve it as an evening snack or breakfast. Please try and give me your feed back.
