Methi Tomato Curry - Menthi Kura Tomato - Fenugreek Leaves

Methi Tomato Curry is very healthy and delicious dish for rice, chapati, roti or pulka. Fenugreek leaves are not only packed with nutrients, they are very aromatic. 
Ingredients
1 bunch of fenugreek leaves/Methi/Menthi Kura
2 small onions
3 tomatoes
a handful of cilantro
1 tsp ginger garlic paste
1 tsp cumin and coriander powder
1/4 tsp turmeric powder
1/2-1 tsp red chili powder
Salt for your taste
For tempering
2 tbsp of oil
1 tbsp chana dal
1 tbsp urad dal
1 tsp mustard seeds
1 tbsp cumin seeds
2-3 green chilies
a few curry leaves
Preparation
Cut onion into small pieces.
Cut tomato also into small pieces.
Pick all the fenugreek leaves from stems and wash them very well. And then cut them finely.
Chop cilantro also very finely.
Cut green chili into small pieces.

Procedure
Place a thick bottom pan on medium heat. Take 2 tbsp of oil in the pan. When the oil is hot add chana dal, urad dal, mustard seeds, cumin seeds and green chili. Fry them until chana dal is getting light brow. Then add curry leaves followed by onions. Add a little salt to onions and ginger garlic paste. Give a stir and cover for about 2 minutes until ginger garlic loses it's raw smell. After 2-3 minutes open the lid and give a stir. You will notice that there is no raw smell from ginger garlic. Then add chopped fenugreek leaves and fry them 1-2 minutes. You will notice the nice aroma from fenugreek leaves when they are frying. Then add tomatoes. To the tomatoes add salt, turmeric powder, red chili powder and coriander cumin powder. Mix them very well. If the curry looks dry add 2 tbsp of water. Cover it and cook on medium flame for 4-5 minutes. You know the curry is done when the tomatoes are soft and the oil is separating from the curry. Add cilantro, give a stir and turn off the flame. Add 1 tsp of ghee(optional) and mix it well. You may serve this curry with whole grain brown rice or chapathi or pulka or naan.

Helpful Tips
Fenugreek leaves have to be washed before cutting. Never wash after cutting.

Fenugreek leaves are packed with nutrients.
They are a good source of iron, calcium, magnesium, potassium, manganese, copper, selenium and zinc.
Fenugreek leaves are also a good source of Vitamin K.
Fenugreek leaves are rich in vitamin A, thiamin, folic acid, riboflavin, niacin, B6 and vitaminC.
Fenugreek leaves and seeds will control diabetes.
