Mexican Rice with Black Beans-Easy recipe for bachelors

Mexican rice with black beans is a popular Mexican food. People make this rice and beans in different ways. Here you see my simple recipe.
Ingredients
3 cups of rice (any rice like basmathi or long grain or sona masoori)
4 and 1/2 cups water to cook rice
1 cup dry black beans
1 tsp cumin seeds
2 medium onions
a handful of cilantro
about 8 tsp of taco seasoning
salt to taste
2 tbsp oil
3 tbsp of butter or oil or ghee
2 tbsp lemon juice(optional)
2 tsp sour cream (optional)

Preparation
Soak black beans in water for 4 hours and cook them in pressure cooker or on stove top.
Wash and cook rice separately in rice cooker or on stove top.
Chop cilantro finely. Cut onions into small pieces.

Procedure
Take the cooked rice into a wide vessel r a basin. Loosen up with a fork to escape the steam so it won't further cook. Add salt to it. Also add 3-4 tbsp of butter or ghee or oil. Mix them well and keep aside.
In another pan take 2-3 tbsp of oil or butter and keep on medium. When the oil is hot add 1 tsp of cumin seeds. When the cumin seeds are popping up add onions and stir. Add a pinch of salt, cover and cook until the onions become translucent. Then add cooked black beans and stir them with onions. Add taco or fajita seasoning. You can add up to 6-8 tsps. Saute for a minute. Add little oil if the contents are dry. After a minute turn off the stove and stir in cilantro.
Add this mixture to prepared rice and mix them very well. If you want more salt or taco seasoning you may add it now. You may also add 1-2 tbsp of lemon juice if you wish. I did not add in mine. Serve it hot or room temp with a blob of sour cream(optional) on the top.
