Mysore Bonda or Mysore bajji is a popular Indian fast food. I made it with urad dal and wheat flour. I added some herbs and spices. I did not use any white flour. So this is a good recipe for those who wants to avoid white flour in their cooking. This can be an evening snack or breakfast item. You still have to be moderate with this because these are deep fried in oil. For that reason always use a good cooking oil.
Ingredients
1 cup urad dal
1 cup wheat flour
oil for deep frying
salt to taste
a pinch of baking soda
2 tbsp of finely chopped cilantro
1 tbsp of finely chopped curry leaves
1 tsp cumin seeds
2 inch piece of ginger
3 or more green chilies
Preparation
Wash and soak urad dal in water for 4-5 hrs.
Drain the water.
Blend it into a smooth batter with salt and a small amount of water.
To this batter add wheat flour and mix it well.
This batter should be little thicker than the pancake batter consistency.
Set this batter for fermentation for about 4-5 hrs. at least.
Chop cilantro and curry leaves finely.
Grind cumin, ginger and green chili into a paste.

Take enough oil for deep fry in a thick bottom skillet. Keep this skillet on medium heat. Add ground cumin ginger green chili paste to the fermented batter. And add a pinch of baking soda. Mix it well. Add salt if it is needed. Remember you already added salt in the batter. Now this batter is ready to make bondas.
Check if the oil is hot enough. When you put a little batter in the oil it should come up. Take some batter into your hand and drop it into the oil carefully like small dumplings. Do not overfill the oil as you need some space to move them around. Fry them on both sides until they are golden brown. Take them out of the oil by draining the oil with a slotted ladle. Put them on a paper napkin to absorb excess oil. Repeat the process in this same way with rest of the batter. Serve them hot with chutney or sauce. Your plate may be empty before even you serve them.
