Okra Curry with Tomato Yogurt Sauce is a delicious Indian recipe for rice,chapati or puri.
Ingredients
1/4 lb Okra/Bhindi/Ladies fingers/Benda kaya
2 tomatoes
1 onion
3 green chilies
1 tsp ginger garlic paste
1 cup yogurt
Some chopped cilantro
1/2 tsp red chili powder
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp or less salt
1/2 tsp amchur/dry mango powder
2 tbsp oil

1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp or less salt

Preparation
Wash Okra and wipe out the water. Cut both ends of okra and give two slits in the middle length wise.
Mix red chili powder, coriander powder, turmeric powder, amchur powder and salt.
Stuff this spice mix in those slits. Stuff the same way with all of the okra and keep them aside.
Cut onion and tomato into small pieces.
Cut green chili length wise.
Chop cilantro finely.
Procedure
Keep a medium size pan or skillet on medium heat. Add oil to the skillet. When the oil is hot add onions and green chili to the oil and give a mix. Add ginger garlic paste to onions and give a mix. Add a little bit of salt, cover and cook for a few minutes until the ginger garlic leaves the raw smell. After about 3-5 minutes open the lid and give a stir. Notice that ginger garlic has no more raw smell. Add tomatoes and cook for 3-5 minutes again until the tomatoes are soft. When the tomatoes are soft add all of the stuffed okra and mix them with tomato and onion. Cover it and cook for about 10 minutes on medium or low medium. After about 10 minutes open the lid and give a stir. If the okra still needs to cook keep it for 2-3 minutes on low heat. If the curry is too dry add a little bit of water. When the okra is cooked well add yogurt while mixing with the other hand. Add some more yogurt if you need. Sprinkle cilantro. Serve it with rice or chapati.
Helpful Tips
While adding yogurt stir quickly with the other hand . Otherwise the yogurt will curdle because of the acidity from the tomatoes.
