Okra Fry Bendakaya Vepudu-Bhendi

Okra fry is a simple and easy recipe for every day cooking. Tips for crispy okra.
Ingredients
Okra about 1 pound

oil 2 tbsp
cumin seeds 1 tsp
coriander powder 1 tsp
red chili powder 1/2 tsp or more
salt 
Preparation
Wash okra very well first. Let them dry out all the water.

Then cut into small pieces.

Procedure
Take a thick bottom pan & keep it on medium flame. Add 2 tbsp oil in the pan. when the oil is hot add cumin seeds and let them crackle. Then add cut okra. Give a stir. Cover & fry for 3-4 minutes. Do not add salt. After 3-4 minutes give a stir and add some salt. Again give a stir and let it fry without covering for bout 5 minutes. If you cover it after adding salt it gets sticky. Keep stirring for every minute. After 5 minutes you will notice that it is not sticking any more. Continue frying for 5 more minutes if you want more crispy. When the okra is crispy turn down the flame to low. Add coriander powder & mix it well. Add red chili powder. Turn off the stove. Give a good mix. Enjoy Okra fry/Bendakaya Vepudu/Lady's finger/Bhendi with whole grain brown rice.


Helpful Tips
Always wash okra first and dry out the water.

Never wash okra after cutting.
A thick bottom skillet will help a lot.
When you are stirring do it gently.
Switch off the flame after adding red chili powder. Otherwise it gets burned.
