Okra sambar or Bendakaya Sambar is a simple and spicy recipe for everyday cooking.
Ingredients
10 Okra/Bhindi/Ladies fingers/Bendakaya
1 onion
2 tomatoes
1 small lemon size tamarind
1/8 tsp stevia or 1 tbsp brown sugar
2 tsp sambar powder
Some cilantro
1/2 tsp turmeric powder
salt to taste
1/2 tsp fennel seeds/Somp (optional)
For Tempering
1 tbsp oil or ghee
1/4 tsp fenugreek seeds
1/2 tsp mustard seeds
1/2 tsp cumin seeds
5 cloves of garlic
1 tsp or more crushed red chili
a pinch of hing
a few curry leaves
Preparation
Wash the vegetables very well.
Cut both ends of okra.
Cut the onions and tomatoes.
Cut cilantro finely.
Soak the tamarind in hot water for 10 minutes and extract juice from it.
Peel garlic and cut into pieces.
Procedure
Put a vessel on medium heat. Take 1 tsp ofoil or ghee and add okra and onion to it. Give a stir and cover them for a couple of minutes. Then add tomato and give a stir. To this tomatoes add tamarind juice, sambar powder, turmeric powder, salt and stevia or jaggery or brown sugar. Add more water and let it boil. Make tempering while the sambar is boiling.
Tempering
Take oil or ghee in a small sauce pan. Keep it on medium heat. When the oil is hot add fenugreek seeds followed by mustard seeds and cumin seeds. When the mustard seeds start spluttering add crushed garlic and fry until it gets light brown. Then add crushed red chili, hing and curry leaves. Add this tempering to our sambar. Let it boil on low heat for about 10 minutes. Add cilantro. Take 1/2 tsp fennel seeds, crush them in your hand and add it to sambar. This is optional. If you don't like the raw smell of fennel seeds you may skip the step. Enjoy the sambar with whole grain brown rice.
