Onion Pakodi-Pakoda

1/4/2014

Onion Pakodi is a popular fast & street food in India. Enjoy homemade Pakodi on a rainy or a snowy day.
Ingredients
1 big onion cut into small length wise pieces.
2-3 green chilies cut into very fine pieces.
Cilantro optional.
Salt to taste.
1 cup of besan
1/4 cup of rice flour
just a pinch of baking soda
1/2 tsp cumin seeds
1 tsp oil to mix in the flour mixture

Oil for deep frying.

Preparation
First add salt, cilantro and green chili to the onions and mix very well. You may add 1/2 tsp red chili powder for more spiciness.
Keep this aside. After 30 minutes you will notice that onions are oozing out the water.
Procedure
Take besan into another bowl and add rice flour, cumin seeds and a small pinch of baking soda.
Mix all these wet ingredients together very well.
Then add 1 tsp of oil to the besan mixture and mix it well.
It helps to get crispy pakodas.
When the oil is incorporated with the besan mixture, add this to the  prepares onions.
Mix them together without adding any water. You should make a right dough.
If you really need water just sprinkle some water.
If the dough is loose add some besan to make a tight dough.

Adjust the salt for your taste.
Frying
Put the oil in a thick bottom skillet on medium heat.
When the oil is hot take some onion besan dough into your hand and drop into the hot oil carefully.
Do not try to drop like balls or lumps.
When they are turning light golden color turn them to the other side and continue frying until golden color on this side also.
When both sides are golden brown, take them into a paper napkin to drain out the excess oil.
Continue frying all the pakodis in the same way.
Serve them hot with coriander chutney or sweet tamarind chutney or you can serve them as they are.

Helpful Tips
It is important to prepare the onions first. Otherwise the dough gets watery later.
You can always sprinkle some water or sprinkle some besan to get the right consistency of the batter.

Health Information
This is a tasty fast food which is deep fried in oil. Obviously it is not healthy when it is deep fried. So we have to be moderate. But it is always better when you make it at home. Because you will be making with a better cooking oil not a used or rancid oil. There is no refined flour used in here which is a good thing.
