Recently I happened to visit an organic farm and bought organic whole oats, spelt berries and whole wheat flour. Because there are no pesticides or preservatives added in this flour, when I make chapati or poori/puri with this wheat flour they are coming out very tasty. So today I decided to make poori and show it to you all how nice they are.
Ingredients
2 cups of organic whole wheat puri
Enough warm water to make the dough.
Oil for deep frying the puris.

Preparation
Take whole wheat flour in a large bowl and add warm water to make a dough. Ad water little by little while kneading. Do not add too much water at a time. Apply little oil on the dough and let it sit covered for 1-15 minutes.
Kneading
After 15 minutes, knead the dough one more time. If the dough is too tight, sprinkle little bit of water and knead it into a soft dough. Divide the dough into small lemon size balls. Apply dry flour to the dough balls and slightly press them into a patty. Keep them covered. Take one patty and start rolling into a flat and round puri on the rolling board with a rolling stick. Continue rolling all the patties.

Procedure
Frying puris
Take enough oil for deep frying in a thick bottom skillet. Heat it on medium heat. Check the oil if it is hot enough by putting a little bit of dough in it. If it comes up to the surface right away, the oil is ready. Take a rolled puri and slowly drop into the hot oil. When you see it is puffing up slightly, you may turn it to the other side. You may move the oil on to the puri carefully to help it puff up easily. When the puri is puffed up on both sides remove from oil, drain out excess oil and transfer into another plate. Repeat the same with all the puris. You may serve them with your favorite curry. Enjoy the organic whole wheat puri and give me your feedback.
