Pancha means five. Patra means leaves. So Pancha Patra Dal is nothing but a dal with five super greens. You may any greens that are available to you. You may also use edible weeds like Dandelion and Purslane.

1 cup toor dal
Some mixed greens. I took Amaranth, Purslane, Dandelion, Fenugreek leaves and green onions.

1 large tomato
3-4 green chilies
3-4 garlic cloves
1/2 to 1 tsp red chili pwdr
salt
For tempering
1 tbsp of oil and 1 tbsp of ghee. (Vegans may use only oil).
1 tsp mustard seeds
1 tsp cumin seeds
2 red chilies
a pinch of hing/asafoetida
a few curry leaves
The other greens that you can use for this recipe are..Spinach, Malabar spinach, Gongura, Kale, Collard greens, Chukka kura, Beet greens, Radish greens, Mustad greens, Arugula, Water cress, Mulagaku etc.

Preparation
Wash and soak 1 cup of toor dal. After soaking fo 30 minutes, cook it on pressure cooker or on stove top. Keep it aside.
Wash all the greens thoroughly and cut them finely.
Cut onion and tomato also into small pieces.
Cut green chili lengthwise.
Roughly chop the garlic.

Procedure
Heat oil or ghee in a thick bottom pan which is on medium heat. When the oil is hot, add mustard seeds and cumin seeds. Also add red chilies by cutting them into small pieces. When the mustard are spluttering, add hing and curry leaves. Then add green chili and garlic. Fry them for a few seconds and then add onion and a pinch of salt. After frying the onion for a couple of minutes, add tomato. Cover the vessel and cook the tomato until it gets soft.
Then add the finely chopped greens. Add turmeric and stir it well. Cover it and cook for 3-4 minutes. After 4 minutes add the cooked toor dal and mix it well. To this add tamarind paste, salt and red chili powder. You can adjust the amount of these according to your preference. Add some water also and adjust the consistency. Cover it and cook on low flame for a few minutes.
Add the remaining green onions and stir it once. Add cilantro and switch off the flame. You may top it with 1 tsp of ghee to enhance the flavor. This step is optional. Serve it hot with brown rice or whole wheat chapati. Enjoy it and share it with your friends and family.
