Rava Kesari-Sooji Halwa-Semolina Halwa

Rava kesari or Sooji or semolina halwa is a very quick and easy desert. When we want to offer some sweet to God as "Neivedyam" sooji halwa comes in mind instantly. Because it is so quick and easy.
Ingredients
1 cup sooji/semolina
1 cup organic raw sugar
1/4 - cup ghee
few cashew nuts
few raisins
2-2 & 1/2 cups water(You may substitute 1 cup of water with milk).

4-5 cardamom pods

Preparation
Coarsely powder the cardamom seeds.
Procedure
Keep a thick bottom skillet on medium heat. Take some ghee into the skillet and fry cashews and raisins until they just change the color. Take them out into a bowl. Add 1 tsp of ghee to the ghee that is already there in the skillet. Fry semolina until you smell a nice aroma. Reduce the flame to between low and low medium. Add water and keep stirring continuously. Make sure there are no lumps. Add sugar also. Keep stirring and let it cook. When it is getting thick add cardamom powder and rest of the ghee. Continue stirring until the halwa leaves the edges of the skillet. Turn off the stove. Serve it hot or room temperature.
