Coconut rava laddu is an easy and popular sweet recipe. It can be made for festivals or any time.
Ingredients
1 cup sooji/semolina/upma rava 1/4 cup coconut powder 1 cup jaggery 2 tbsp almond powder 1 tbsp chopped cashews 1 tbsp raisins 3 tbsp ghee 3-4 tbsp milk 4 cardamoms Preparation Remove the husk from cardamoms and coarsely powder them. Chop the cashews into small bits. Dry roast the almonds and powder them. If you have ready made powder you may use. Powder the jaggery. |

Procedure
Place a thick bottom sauce pan on low medium heat. Heat 1 tbsp of ghee. Fry cashews for about 30 seconds, then add raisins and fry them together. Take them out when the cashews are getting light brown and the raisins are puffing up. Take 2 more tbsp ghee into the pan and fry the sooji until you get a nice aroma. Then add dry coconut powder and fry them together. When the coconut also giving nice aroma quickly add almond powder and mix them well. You do not need to fry because the almonds were already roasted. Add jaggery and give a good mix. Turn off the stove. Transfer the mixture into another bowl and add cashews, raisins and cardamom powder. Mix them well with a spatula and if there are any lumps in the jaggery just break them with your fingers. Now add some milk slowly to make laddus. Do not add too much milk. Add just enough milk to form a laddu. Make laddus in your hand by pressing a handful of sooji mixture. With these measurements I could make 8 laddus.
